JOB ROLE (“Commi I/ II/ III ( Tandoor, Indian, Chinese, Conti)
1.To be able to produce all food items in section.
2.To notify the Chef de Partie for items required on the market lists.
3.To control the hygiene and maintenance of all kitchen equipment that you use.
4.To ensure that you are in correct uniform, cleaned daily and that personal hygiene practices are continually followed.
5.To follow the weekly schedules.
6.To help maintain staff morale and inter-departmental relationships.
7.To advise the Chef de Partie or Sous Chef on out of stock items.
8.To always look at the operation of the Kitchen, and bring forward for implementation any suggestions for the improvement of our product.

Job Description for Tandoor Commi 1& 2:

Produces food of high quality according to standard recipes

Assists with the preparation, presentation, decoration and storage of the following dishes:

Meat dishes

Meat marinades

Carve meats

Fish and shell fish

Sauces for fish and shell fish

Garnishing techniques and methods of service for fish

Communicates politely and display courtesy to guests and internal customers

Provides direction to the Kitchen helpers, including Cooks, Kitchen Attendants and Stewards

Communicates to his/her superior any difficulties, guest or internal customer comment and other relevant information

Establishes and maintains effective employee working relationships

Attends and participates in daily briefings and other meetings as scheduled

Prepares in advance food, beverage, material and equipment needed for the service

Cleans and re-sets his/her working area

Implements the hotel and department regulations, policies and procedures including but not limited to:

House Rules and Regulation

Health and Safety

Grooming

Quality

Hygiene and Cleanliness

Procedure of interview – There will be two rounds of interview:
• 1st round will consist of Mock Interview Session with grooming at Spearhead Office to prepare the candidates for the interview. We also arrange for Spoken English & Basic Computer Training Programmes by experienced professionals from the Industry wherever required.
• 2nd round will be at the client’s place whereby the final selection would be done.
